What makes it so unique? The “monsooning” process—a centuries-old tradition turned specialty technique. Originally, Indian beans spent months exposed to sea winds and tropical humidity as they made their way to Europe by ship, naturally changing in color and flavor. Today, that transformation is carefully replicated in Southwest India during the monsoon season 🌧️. Over a 7-week period, beans are spread out, exposed to high humidity, and repacked and restacked to absorb the moist air—developing their signature yellow hue, smooth texture, and aged character.
Once blended and sold anonymously, India’s coffees have now taken center stage in the specialty world. Grown in the Malabar and Tellicherry regions of Kerala, these beans are carefully processed and hand-sorted to preserve their one-of-a-kind flavor.
